Nipa Palm Syrup

Nipa syrup contains 24.77% moisture content, 5.86% ash, 0.41% fat, 2.1% protein and 67.04% carbohydrates. Nipa syrup obtained a pH value of 4.6, titratable acidity of 1.30%, water activity of 0.614 and a viscosity of 27.136 Pa’s . Nipa syrup also has 90* Brix, 21.45% total sugars, and 19.35% reducing sugars.

Nipa syrup was found to be most active against E. coli and C. albicans

Nipa syrup demonstrated 42.19% radical scavenging activity, based on the results of the DPPH assay. Antimicrobial and antioxidant activities could be attributed to the presence of phenolics. Total phenolics content of nipa syrup is 29.7099 mg/ 100 ml GAE.(nipasyrup.blogspot.com)


Milagros Enriquez, matriarch of the Enriquez family of San Jose, Bulacan, and author of the book “Kasaysayan ng Kaluto ng Bayan,” started Pamana ni Ka Mila Food Products in 2000.

The matriarch shared her knowledge with daughter-in-law Czarina who now owns and manages the business. One of the most valuable ideas she has shared with Czarina is her knowledge of nipa, and the potential of sukang sasa, which comes from nipa.

Today, the company’s “Sukang Bulacan” and “Tuba ng Sasa” are exported to the US, France and Japan.
