The Special Coffee of Mt. Apo



What makes Mt. Apo Civet Coffee taste heavenly?

First, it is the crossed variety between Arabica Coffee and Robusta named "Katimor". It is grown at 1,500 meters above sea level in the very rich volcanic soil of the Phlippine's highest mountain and that is Mt. Apo in Mindanao, where Mt. Apo is located in the center of the coffee belt with the same latitude at Ethiopia. The parchment excrement of civet coffee is let to ferment for a week before it wash, dried and roasted to give time the enzyme to penetrate the parchment. Thus the combination factor crreate a heavely coffee which is smooth and chocolatey taste.



Civet Coffee 

Civet coffee is the most expensive coffee in the world. Its made from coffee berries that have been eaten and passed through the digestive tract of the asian palm civet cat. When in the cats stomach. proteolytic enzymes seep into the beans making shorter peptides and more free amino acids. After the beans are roasted the beans yield an aromatic coffee with much less bitterness than regular coffee. Civet coffee is produced in Indonesia and the Philippines.


The origin of Kopi Luwak is closely connected with the history of Coffee production in Indonesia. In early 18th century The Dutch established the cash-crop plantations in their colony in the Dutch East Indies islands of Java and Sumatra, including Arabica coffee.The Dutch prohibited the native farmers and native plantation workers to pick coffee fruits for their own use. Yet the native farmers desired to have a taste of the famed coffee. Soon the natives learned that the Asian Palm Civet Cat consumed these coffee fruits, yet they left the coffee seeds undigested in their droppings. The natives collect these dropping coffee seeds; clean, roast and grind it to make coffee. The fame of aromatic civet coffee spread from locals to Dutch plantation owners and became a great discovery producing the most delicious coffee in the world.

Altura Coffee

Mount Apo Altura coffee is selected and picked from the healthiest Arabica trees that grows at the higher altitude range of Mount Apo. This coffee comes from beans that are organically grown at elevation exceeding 1500 meters above sea level. Mount Apo being the highest mountain in the Philippines and its rich volcanic soil makes this coffee truly special.
